We hosted a party for Cindo de Mayo and I didn’t want to serve margaritas since it was also the Kentucky Derby. I also didn’t want to serve Mint Juleps since it was Cinco de Mayo. I created this amazing mix of flavors and tequila that is by far the best tequila cocktail you will ever have. Everyone raved about this drink, so I am posting it here for all to try and enjoy!

Caballo de Mayo
Since I made this for a party, I made it in a pitcher, so reduce the proportions if you are making this as an individual drink. The recipe below is for a large batch.
1 bunch fresh mint leaves
1 cup Tequila
3 oranges
3-4 cans of Gosling Ginger Beer

Begin by washing and plucking the mint leaves from the bunch. Toss them in the bottom of the pitcher. Squeeze the juice from two oranges into the pitcher. Add about a half cup of crushed ice and muddle the mint and orange juice.
Next, add tequila and enough ice to fill the pitcher a little more than half-way up. Add the ginger beer (3 or 4 cans depending on how large your pitcher is). Add sliced oranges as a garnish and stir.
This Caballo de Mayo recipe is simple and is also a huge crowd pleaser. Both the ladies and gentlemen at the party absolutely loved it. The combination of mint and orange is fabulous. I used silver tequila because I think it has a milder taste than the darker version.
