It’s the new year and we are all committing to eat healthier and save money, right? Let me help you out! I have three cheap healthy meals that you can throw together for an easy weeknight dinner.
Three Cheap Healthy Meals
Roasted Chicken and Roasted Vegetables
Fist of all, let me tell you about my addiction to fully-cooked roasted chickens. Our grocery store sells them for $4.99 and so does Costco. I ALWAYS have a fully-cooked roasted chicken in my fridge. I can’t buy a raw whole chicken, season it and cook it in less time and for less money that $4.99! I will not go back to buying a raw chicken and cooking it myself! These $4.99 chickens are such a time saver.
So, next time you are at the grocery store, grab a fully-cooked roasted chicken and some vegetables. My favorite veggies to roast are Brussels sprouts, sweet potatoes, carrots, cauliflower, squash… Roast them all together or single one out, mix with chopped onion, chopped garlic, and olive oil. Sprinkle on some salt and pepper and roast at 400 for about 30-50 minutes (depending on how much you are cooking).
That’s pretty simple, right? Roasted chicken and roasted vegetables. Easy, healthy and cheap!
Roasted Pork Tenderloin
When you buy a pork tenderloin, it comes with two tenderloins, so if you are feeding a typical family of 4, you will likely have leftovers! This is my favorite way to prepare pork tenderloin. Add some Parmesan roasted tomatoes and you have another simple, cheap, healthy meal.
Fresh Tomato Sauce
Sure, buying a jar of tomato sauce, boiling a box of noodles and calling it dinner is easy and cheap, but do you know how much sugar is in a jar of spaghetti sauce?! Make your own with this simple fresh tomato sauce recipe. This is a much healthier option and it is easy peasy to prepare.
Other Ideas
