My philosophy on recipes- they are simply a suggestion. The reality is- I usually don’t have all the ingredients called for in a recipe, so I substitute with what I have. This is how I discovered my new favorite salad! The night before Easter I realized I needed to bring a salad to our family lunch the following day. I didn’t want to send my husband out to the grocery store at 9pm, so I just decided to use what I had in the house. What I “threw” together was a hit (and absolutely delicious)! I give you- my easy spring salad- Apple, Walnut and Blue Cheese Spring Salad with Apple Cider, Dijon Vinaigrette.
Easy Spring Salad:

- 1 Large Container Spring mix
- 1 Apple (chopped into bite-sized pieces)
- 1 cup Walnuts
- 4oz Crumbled Blue Cheese
Dressing:
- 1 Tbsp Dijon Mustard
- 1 Tbsp Honey
- 1/2 Cup Apple Cider Vinegar
- 1/2 Cup Olive Oil
- Salt and Pepper to Taste
Toss the salad, add enough dressing to coat, but not saturate the salad (probably about 1/3 of the dressing). This salad is a huge crowd-pleaser. It was the first thing gone at Easter lunch. Serve this easy spring salad with brunch, lunch or even dinner!
