Do you love pasta but hate the amount of sugar in a jar of tomato sauce? I have the best and EASIEST fresh tomato sauce recipe for you! This fresh tomato sauce is so simple and you can make it in the amount of time it takes to bring a pot of water to a boil and cook your pasta!
What you need:
1 large container of snacking tomatoes (I’ve also seen it labeled as tomato medley)
Wegmans Basting Oil (or olive oil)
1-2 Cloves of Garlic (chopped)
8-10 Fresh Basil Leaves
Pasta
Reserved Pasta Water
Italian seasonings (Optional)
How to Make Fresh Tomato Sauce:
Put a pot of water on the stove and bring to a boil.
Wash your fresh tomatoes. In a large skillet cover the bottom of the skillet with oil and heat at medium low. Add your tomatoes and garlic. Cook at medium low to medium (depending on how hot your skillet gets) stirring often. You don’t want to burn your garlic! If your water is boiling, add some salt to your water and put your pasta in to cook.
As the tomatoes get hot they will pop. After about half have popped, you can help the other tomatoes along by squashing them with a spoon or spatula. Keep stirring until your pasta is cooked.
Add basil and whatever seasonings you would like and turn your skillet down to low.
This is the important part- Use tongs to add the pasta DIRECTLY TO THE FRESH TOMATO SAUCE. DO NOT DRAIN THE PASTA! Add about 2 ladles of reserved pasta water to the fresh tomato sauce with the pasta and mix well. Allow that to cook for about 5-10 minutes on low stirring often.
Serve with fresh, grated Parmesan.
