I made these grilled pineapple mojitos years ago…when I was pregnant with my first kiddo. Ever since then, this has been my husband’s favorite mojito recipe. Now we make them on occasion…like on hot summer days when we plan to spend the day grillin’ and chillin’ in the pool!
Let’s start with what you need to pick up from the store.
Grilled Pineapple Mojito Recipe
What You Need
Pineapple
Mint- 3 or 4 leafs
Lime- 1/4 of the lime
Rum- 2 oz
Club Soda
Sugar- 1 tablespoon
Ice

How to Make a Grilled Pineapple Mojito
First of all, grill the pineapple. Slice the pineapple into “steaks”, avoiding the core…like this. Grill on both sides.
Cut up the pineapple into chinks and pop into a food processor or blender until pureed.
Next, muddle the mint, lime and sugar with a little bit of crushed ice. I have a muddler and I love it. Add about a tablespoon of pureed pineapple and mix well. Time to mix in the run! Fill the remainder of the glass with ice, add a couple ounces of rum and top with club soda.
You can also make this sweeter by adding simple syrup. But, if you are like me and don’t like super-sweet, the pureed pineapple and muddled sugar add enough sweetness to this drink.
I love using fresh pineapple chinks, a sprig of mint and a lime wedge to garnish this cocktail.
