We love tomatoes in our house! Like seriously love them. During the summer months, we have fresh tomatoes just about every day. I started making Parmesan Roasted Tomatoes a few years ago and my husband loves them. This is a very quick and easy side dish, especially if you are short on time. Three simple ingredients go into this Parmesan roasted tomato recipe. Did I mention this was easy?
What you need:
Tomatoes (I usually make one per person)
Wegman’s Basting Oil (or regular olive oil and whatever seasonings you prefer)
Freshly grated Parmesan
How to make Parmesan Roasted Tomatoes:
Preheat oven to 400 degrees
Line a cookie sheet with aluminium foil
Slice the tomatoes into ¼ inch thick slices and place on foil-lined cookie sheet
Drizzle with oil
Sprinkle with seasoning (if you don’t have Wegman’s Basting Oil)
Top with a generous pinch of Parmesan cheese
Place in oven for 5-7 minutes (until cheese is melted)
That is it! You have a delicious side dish in just minutes. I was never a big fan of roasted tomatoes until I added Parmesan cheese to them. The saltiness of the cheese complements the tomatoes perfectly. Add whatever seasoning you’d like to customize this dish.
If you have issues with your tomatoes getting squished when you cut them, it may be time to upgrade your knives. We bought Shun Kaji knives when we got married and they are the absolute best knives I’ve ever used. Extremely sharp and crafted in Japan, these knives are truly phenomenal.
Parmesan roasted tomatoes go well with any main dish. Tonight we had them with steak, but the other night I made them with roasted pork tenderloin. If you are looking for a VERY quick and simple meal, grab a $5 roasted chicken from your grocery store of choice (or Costco) and make Parmesan roasted tomatoes. Throw together a box of Near East couscous in addition to the chicken and Parmesan roasted tomatoes and you literally have a complete (and healthy) meal in less than 10 minutes!
