Did you know Nestle makes pumpkin spice chips? I didn’t either until I saw them in Wegman’s the other day. To say I got excited is an understatement. I immediately threw a bag of the pumpkin spice chips in my cart. By adding the pumpkin spice chips to my basic oatmeal cookie recipe, I came up with Pumpkin Spice Oatmeal Cookies; because who doesn’t love oatmeal cookies in the fall?
What you Need
1 cup Butter (room temperature)
1 cup regular Sugar
1 cup firmly packed Brown Sugar
2 Eggs
1 teaspoon Vanilla
2 cups Flour
1 teaspoon Baking Soda
1 teaspoon Salt
1/3 teaspoon Cinnamon
3 cups Oats
1 cup Pumpkin Spice Chips
How to Make Pumpkin Spice Oatmeal Cookies
Preheat oven to 350 degrees
Beat butter, sugar and brown sugar well
Add eggs and mix well
Add vanilla
Sift together flour, baking soda, salt and cinnamon
Incorporate dry ingredients to the butter/sugar mixture
Stir in oats and pumpkin spice chips
Scoop onto foil-lined baking sheet*
Bake for 10-12 minutes
Cool on cookie sheet
*For easy scooping, use a small cookie scoop. It will help make perfectly balanced and consistent-shaped cookies and makes clean up a snap!
These pumpkin spice oatmeal cookies are delicious! And they are totally acceptable to eat for breakfast since they contain oatmeal. Happy Fall Y’all!
