I love fall. I love the changing of seasons, the cooler weather, the anticipation of the holidays and I love the flavors of fall dishes. One of my favorite dishes to make during fall is savory pumpkin soup. This soup is so rich and filling, and it is savory, not sweet, like a pumpkin spice latte.
This soup is a perfect starter for any fall dinner or a wonderful option as a stand-alone meal.
What You Need
1 can 100% pure pumpkin
1/3 cup flour
1 stick of butter
½ cup of finely chopped onion
32 ounce container of chicken broth
1 cup apple juice
2 cups water
1 chicken bouillon cube (or packet)
1 cup heavy cream
How to Make Savory Pumpkin Soup
In a large pot, melt butter over medium low heat
Add onion and sauté until translucent
Add flour and make a roux
Whisk in chicken broth, water, apple juice and pumpkin (Use a silicone whisk to protect your cookware)
Turn heat up to medium high and bring to a boil, whisking often
Once the soup is boiling, add chicken bouillon and whisk until dissolved
Turn heat down to low and slowly whisk in the cream
Cook on low for about 5 more minutes stirring often
Serve immediately
This soup is so good. I made this on a Sunday afternoon, as I was planning to serve this for dinner. I ended up having two cups while I was “tasting” it! Serve with mixed greens or quiche for brunch, as an appetizer for dinner, or a stand-alone entree for lunch! This savory pumpkin soup is filling and flavorful and will definitely get you in the mood for fall.
