Summer is officially upon us! That means fresh garden vegetables and all the yumminess that comes along with using them in recipes. I love cooked summer vegetables and this summer ratatouille recipe is by far my favorite way to prepare summer vegetables. My in-laws live about 70 miles from us on a few acres of land, so we have a nice garden on their property where we grow cucumbers, squash, zucchini, melons, tomatoes and jalapenos. I love making summer ratatouille and it is a hit at summer get-togethers. This summer ratatouille is a perfect accompaniment to any dinner.
Summer Ratatouille Recipe
Ingredients
2 Yellow Squash
2 Zucchini
3-4 Tomatoes (depending on their size)
2 Sweet Potatoes
1 Yellow Onion
2 Garlic Cloves
¼ Cup Wegman’s Basting Oil (or Olive Oil)
½ Cup Shredded Parmesan Cheese
Salt
Pepper
*You want to look for vegetables that are approximately the same size in diameter since you will be slicing and stacking them together. Also- use your best judgment to pick vegetables that will yield the same amount once you slice them.
How to Make a Summer Ratatouille
Slice the squash, zucchini, tomatoes and (peeled) sweet potatoes into thin slices. Try to keep them the same thickness.
Chop the onion and garlic and sauté for about 5 minutes with a tablespoon of oil. You want the onions to just begin to turn translucent, but not completely cook (they will continue cooking in the oven).
In a baking dish, cover the bottom with the onion/garlic mixture.
Begin “stacking” the vegetables -making columns of the vegetables in a pattern-using one slice of each and then repeating the pattern. Depending on your baking dish, you will end up with 2-3 columns.
Drizzle the vegetables with olive oil and sprinkle salt and pepper. Feel free to add other seasonings (like rosemary or thyme) depending on your taste.
Cover with aluminum foil and bake at 425 for one hour. Uncover and sprinkle the parmesan cheese over the vegetables. Bake uncovered until the cheese melts.
